Cut five sweet potatoes, peel and slice into 1/4-inch-long slices. In large bowl, toss with just enough olive oil to coat. Sprinkle with a mixture of 1 tablespoon of a salt, black pepper, and garlic powder mixture. Spread in a single layer on a baking sheet lined with parchment, and bake until sweet potatoes are tender and golden brown, turning occasionally, about 20 minutes.
