This baked halibut with chickpea crumb topping is inspired by a local restaurant's Italian breadcrumb topping called ala Louis.
My father used to love to go out to dinner. One of his favorite restaurants was Louis Tambellini's located near downtown Pittsburgh. It was Italian as the name suggests, but also had a great selection of fresh seafood and American cuisine.

Sadly the restaurant closed its doors in 2007, and a month prior to my father's passing.
So today I'm sharing a baked fish recipe with a nod to Tambellini's restaurant.
One of their signature preparations was Ala Louis Style. As I recall it was a tasty Italian bread crumb topping on the fish of your choice.

Baked Halibut with Chickpea Crumb Topping
I chose a nice piece of Halibut. I think this crust works best on a good white fish but it doesn't have to be halibut. Using it on tilapia or cod would work well too.
Ala Louis was definitely a bread crumb topping but I found these chickpea crumbs in the grocery store and decided to try them.
After checking the nutritional panel, I found that they are not any better than bread crumbs in regard to calories, carbs, protein or fiber. However, they are gluten-free and they don't have any added ingredients.
I'm always trying to add more fish to our diet and we often eat salmon, but this was a great change of pace. In fact, I think this is one we will start eating on a regular basis.
Other ideas for this baked fish topping:
- Go ahead and use bread crumbs - flavored or unflavored
- Add Parmesan, Romano or other grated cheese
- Add different fresh herbs like thyme or cilantro
- Use lemon zest or any other citrus zest
- Try a pinch of hot pepper flakes in the mix
This baked halibut with chickpea crust was great for a quick and tasty meal. And, it brings back fond memories of my dad.

Ingredients
- 2 - 5- ounce halibut fillets
- 1/2 cup chickpea crumbs
- 1/8 cup olive oil or butter
- 2 cloves garlic grated
- 1 teaspoon fresh parsley chopped
- salt and pepper
- lemon to serve
Instructions
Preheat oven to 350 degrees
Clean fish and set it in a baking dish that has been sprayed with vegetable oil.
Salt and pepper the fillets.
In a bowl combine chickpea crumbs, olive oil, garlic, and parsley. Mix well.
Divide the crumb topping evenly over both fillets.
Bake for 20 - 25 minutes, until the side looks opaque and can be flaked with a fork.

Patti, this looks just wonderful! Never heard of chickpea crumbs. Will have to look for them. Will try it (if I can find the crumbs) but think I'll use tilapia. We use a lot of salmon but not much halibut. Thanks for sharing.

Thanks Paula. I have used this recipe on cod and I think tilapiawould be good too. If you can't find the chickpea crumbs at the store you could try regular bread crumbs or panko breadcrumbs. I also updated the post to add a link on Amazon where you can buy it for your convenience.
