  • Cumin Seeds (Zeera) - 1 Tbsp
  • Cloves (Laung) - 2 Tsp
  • Green Cardamom (Hari Illaichi) - 2 Tsp
  • Bay leaves (Taiz Patta) - 6
  • Blakc Pepper (Kali Mirch) - 1 Tbsp
  • Coriander (Sabut Dhania) - 1 Tbsp
  • Mace (Javitri) - 3 to 4
  • Black Cardamom (Badi Illichi) - 5
  • Cinnamon (Dar Chini) - 5 Sticks
  • Nutmeg (Jayfal) - ½ Piece
  • Ani Seed (Badyan) - 4
  • Red Chili Powder - 1 Tsp
  • Garlic Powder - ½ Tsp
  • Ginger Powder - ½ Tsp
  • Cumin Powder - ½ Tsp
  • Salt - 1 Tsp
  • Black Salt - ⅓ Tsp
  • Mango Powder (Amchor) - ⅓ Tsp

Method

  • Preparation of Garam Masala: In a pan, roast the whole spices (Cumin Seeds, cloves, green cardamom, bay leaves, black pepper, coriander, mace, black cardamom, cinnamon, nutmeg, aniseed) until it gets aromatic. (Don't over toast the spices).
  • In a grinder, grind all the spices to make a fine powder.
  • Preparation of Biryani Masala (1 KG biryani)
  • In a bowl, add garam masala powder, red chili powder, garlic powder, ginger powder, salt, black salt, and mango powder.
  • Mix well to combine all the ingredients.

Now the tasty and delicious biryani masala is ready to add in all types of biryani.
